1 onion

2 carrots

2 stalks of celery

2 cloves garlic

1 Tbsp olive oil

4 beets

4 cups of water

1 bay leaf

1 tsp sugar

Once the soup is cooked and blended, you must add:

1 Tbs chopped fresh dill (or 1 tsp dried)

1 Tbsp lemon juice

½ – 1 tsp horseradish to taste

1/2 cup Sour Cream

Chop up the onion, carrots and celery. Warm up the olive oil in your soup pot and saute the chopped vegetables. Give the beets a good scrub and cut off both ends. Do not peel the beets just yet. Place the beets in the pot along with the water, sugar, garlic and bay leaf. Simmer for 45 minutes, then get the beets out and peel them. Blend the beets, vegetables and soup broth together. Place the blended soup back in the pot and add the remaining ingredients. Enjoy and stay healthy!
